Buffalo Spiced Nuts
When I tried these last month I KNEW I had to knock them off! So I called our dear friend Rebecca at Cakewalk Catering . . .again! . . . and she set to work. I’m originally from Michigan, where Buffalo Wings are a sports-night staple. So often though commercial wing sauces are loaded with sugar and preservatives. In the recipe below, we’ve captured the flavor of those wings, but without any of the bad stuff.
By the way, I am a BIG believer in almonds as a great source of on-the-go protein. You’ll always see me with one of those car-cup-holder-sized containers being passed around when I pick the children up from school. Having the right snacks on hand helps you to make the right decisions when hunger strikes.

Buffalo Spiced Almonds
2 cups raw almonds
2 TBsp Frank’s Red Hot Sauce
2 TBsp butter, melted
1/2 tsp cayenne ** (Like it spicy? Increase the cayenne to 1 or 2 tsp)
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp salt
Preheat oven to 350 F
Mix the hot sauce, butter and spices in a bowl. Add almonds and stir to coat. Spread coated almonds on a parchment paper lined baking sheet in a single layer.
Bake 8-12 minutes
8 servings- each serving 5.5g carbs 2.5g fiber
